Belgian Waffle Info

 

Belgian Waffles are a variety of waffle. A waffle, like a pancake, is made of a light batter. Unlike a pancake, it is cooked in a waffle iron. Ordinary pancakes and waffles in the United States are made with a batter that is leavened with baking powder. Not so the Belgian Waffle. It is made from a yeast-leavened batter and the resulting waffle is light and crispy.

We sampled a variety of Belgian Waffles during a trip to Belgium in 2007. Some were bought from street vendors, who tended to dust them with confectioner's sugar. Others were bought at restaurants, and at these sit-down establishments we were able to top the waffles with ice cream (my favorite), or fruits or chocolate syrup.
